Cauliflower is the popular girl in the low carb gluten free world but why settle for just boiled, mashed or roasted? This recipe is super easy both with cooking and assembly. It has a little crunch and you can change the flavorings as desired. Gluten-free low carb and a nice holiday splurge!
Steam cauliflower for 8-10 minutes or microwave till tender.
Combine cauliflower and rest of ingredients (except remaining pecorino) in blender or food processor and pulse until desired consistency (creamy or crunchier). Put into prepared buttered baking dish (recommend 9- inch round). Top with remaining pecorino cheese and top with other suggested desired variations.
Bake for 15-20 minutes until cheese is melted. If a darker top is desired place in broiler for a few minutes.
Notes
If you want a richer flavor consider roasting the cauliflower (versus steaming or microwaving) and using freshly grated nutmeg!Â
