Easy Gluten-Free Guilt-Free Pizza?
You’re craving your favorite pizza but know you can’t really afford the carbohydrates as you’re watching your weight and health! Here’s a solution to both your quandaries and it’s easier than you realize. Not only are these simple pizzas healthy, gluten-free and easy but they can be made in less time that it takes to order a pizza and have it delivered. You can vary this recipe using your favorite pizza toppings.
Portobello Mushroom Pizzas
Ingredients:
4 large Portobello mushrooms
2 tablespoons olive oil, divided
1 cup cherry tomatoes
¼ cup thyme
6-8 tablespoons of low sodium tomato paste
1 cup of Mozzarella cheese, grated
Fresh basil leaves
Salt and pepper to taste
Preparation:
Preheat oven to 375 degrees F.
Rinse mushrooms and pat dry. Remove stems and insides of mushrooms. Brush all sides of mushrooms with a thin coat of olive oil.
Place in a lined baking sheet with cap side up and bake for 8-10 minutes depending on the thickness of the mushrooms. While mushrooms are baking, roast cherry tomatoes in a medium sized pan with remaining tablespoon of olive oil, thyme, salt and pepper to taste.
Remove mushrooms from oven, and invert cap side up. Spoon 1-2 tablespoons of tomato paste in each one. Top with roasted tomatoes and ¼ cup grated cheese, and some fresh basil.
Bake for 15-30 minutes or until cheese is melted and mushrooms are tender. Remove from oven and enjoy!
