Dressing up your Salad
Many ask “am I allowed to have salad dressing?” It’s interesting how the “fat-free” era is in many people’s minds.
What they don’t realize is that the nutrients and antioxidants in salad and vegetables need some healthy fats to be absorbed and that has been known for over a decade.
Here’s a tasty dressing from A Recipe for Life that contains the monounsaturated fat olive oil, spices, takes 5 minutes to make and far tastier than any bottled dressing you would buy.
Jeffrey’s Salad Dressing
Ingredients
¼ cup red wine vinegar
¼ cup white balsamic vinegar
2-3 tablespoons fresh lemon juice
¼ teaspoon black pepper
¼ teaspoon garlic powder
1 tablespoon Dijon mustard
2-3 tablespoons finely grated parmesan cheese
2-3 tablespoons good quality olive oil
Preparation:
Mix together all ingredients and serve on salad. Store remaining dressing in refrigerator. Prior to using, set out for 15 minutes or run container under hot water to melt any oil that turned solid by being refrigerated.
