Simply Soup
As we get into the cold and holiday season soup is always a favorite. But is it really healthy?
Many soups you eat at restaurants or as take-out at the grocery store contain broth which contains MSG, high levels of sodium and other additives and ingredients that are less than desirable.
So how can one make a healthy soup that is easy to prepare and satisfying?
Enter squash season….
Last year Jeffrey and I purchased a Vita-mix and discovered the easy art of making squash soup.
Literally you cut the squash in half, roast it in the oven at 375-400 degrees at least 1-2 hours til it is tender when pierced.
Take it out, add some spices and put in the blender with a liquid (either a good quality vegetable or chicken broth or milk or a combination of milk and half and half for decadence).
Wala – simple clean delicious soup.
Last night we had a beautiful pumpkin that we needed to eat. We roasted it in the oven with some allspice, curry and red pepper till it was tender. We put it in our blender with milk and a little cream and here is the picture of our delicious soup for tonight’s Sunday dinner. Simple, easy and healthy and better than any restaurant I’ve ever visited.
