Spiced Yams

Cook Time: 30 minutes

 

Ingredients:

2 medium yams

2 tablespoons of unsalted butter, melted

1 tablespoon of olive oil

½ tsp. of cinnamon

Pinch of ground ginger

Pinch of ground allspice

 

Preparation:

Preheat oven to 350 degrees.

 

Peel and slice yams and peel into ¼ inch medallions. On a grill pan over medium heat cook yams on both sides until hash marks appear, approximately 2-3 minutes per side.

 

Mix all other ingredients in a small bowl. When yams are slightly soft, put in glass dish and cover with butter and spice mixture. Place in oven for 10-15 minutes and serve warm.
