Pork with Apples and Carrots

Ingredients:

1 tbs. of olive oil (divided in two parts)
1 tbs. of unsalted butter
4 ½ inch boneless pork loin chops (about 3-4 ounces each)
1 large apple (pink lady works well), peeled,
cored and cubed
1 cup of chopped carrots (approximately 5 small)
1 tsp. of ground ginger
½ tsp. of ground sage
¼ tsp. of ground pepper

Rinse meat and pat dry.  Mix spices in a rub of ginger, sage, and pepper.  Rub half of the oil on all sides of meat.  Spread the rub on both sides of the pork loins.

Heat the other half of the oil (½ tbs.) in a large skillet over medium heat.  Add pork to the skillet and sauté until brown, about 3-4 minutes per side and then transfer to a platter.

Add butter to the pan, and add chopped apple and carrots to the skillet.  Saute until golden brown.  Then stir in approximately ¼-1/3 of a cup of water and cook until tender.  Add pork back to the skillet and simmer until hot.  Season to taste.
