Jeffrey’s Chicken Salad
Serves: 6

Approximately 1.5 pounds of skinless, boneless chicken breasts.
Rinse chicken and boil in medium saucepan with a pinch of sea salt.

Mix:

4 tbs.  Canola Mayo
1 tsp. of honey mustard (or regular mustard)
1/2 tsp. plus pinch of curry powder
1/8 tsp. plus pinch of garlic powder
2 tbs. of milk
Pepper to taste
1 tart red apple (pink lady works very well)
1/2 cup pecans
1/4 cup unsweetened coconut
Cut up chicken and mix in mayo-mixture and then 
add the apple, pecans and coconut.
