SBD Salad

This salad is a combination of some of my favorite foods that I eat most every day. It is packed with nutrient-dense foods. It can be assembled in a few minutes for a quick and easy lunch or dinner if you have some pre-cooked chicken breasts. Substitute a 6-ounce can of tuna for the chicken if desired.

2-3 cups of mixed greens or romaine lettuce
1 medium tomato, sliced
2 tablespoons of chopped sweet red bell pepper
2 tablespoons of soft goat cheese
1/3 of a medium avocado
1 tablespoon of pine nuts ( or any other nuts or seeds)
1 medium skinless, boneless chicken breast, broiled
2 tablespoons of balsamic vinegar

Assemble salad and enjoy!
