Guacamole with a Balance
approximately 13 1/4 cup servings

A couple of years ago, I attended a barbecue at my friend Tony's house. I saw him putting cottage cheese in his guacamole which I thought was unusual, but tried it, and it has been a hit ever since. The following guacamole has some protein which is good for a balanced snack. Be sure to have it with "Crudites" (cut up veggies) rather than the traditional faire, and you will have a great afternoon weekend snack. Enjoy!

1 Large or 2 medium Avocados
1 1/2 cups of 2% Lowfat cottage cheese
Juice of 1 lime
Spices as desired (salt, pepper, cilantro)

Instructions:

Blend all ingredients in the blender on medium speed till desired consistency.
