Cinnamon Lamb Chops

Ingredients:

4 loin-cut lamb chops (about 3-4 ounces each
or 1 pound total)
1/4 tsp. of kosher salt
1/4 tsp. of pepper
1 tsp. of ground cinnamon
2 tbs. of unsalted butter

Instructions:

Mix together butter, salt, pepper, and cinnamon
into a paste and rub over each lamb chop in equal proportions.

Sauté lamb chops in a large dry skillet set over medium heat until browned, about 4-5 minutes
per side.  Wait 2 to 3 minutes and serve.
